The famous Hanoi snail noodle dish made from simple and rustic ingredients including snails or stuffed snails, vermicelli, tomatoes, herbs, and spices is a delicious Hanoi dish that is loved by tourists near and far. Process:
Step 1: Soak the snails in water to wash the rice overnight to remove all the oil and dirt, and rinse. Put a little water in a pot of boiling water, use a sharp toothpick to poke the snails, and the water from the snail’s broth to settle to extract the clear water
Step 2: Fry the white part of the onion with cooking oil to make it fragrant, then add the snails to stir-fry, remember to season with spices
Step 3: Wash tomatoes, cut into 4 and remove seeds. Stir-fry with cooking oil to get color, because the characteristic of a snail noodle dish is a pot of broth with pieces of red floating tomatoes, so you can increase the number of tomatoes if you like.
Step 4: Pour the boiled snail water that has settled into the pot, and add enough water to use. Bring to a boil, season to taste, then add vinegar, depending on the type of vinegar, the acidity is also different, so you should slowly add it until the desired acidity is reached, then stop. The reason for giving vinegar is last because if you give it early, it will reduce the aroma of natural vinegar.
Step 5: Dry chili you distill with cooking oil. Cover the vermicelli with old boiling water, take it out to dry, then put the pens in a bowl, sprinkle snails, onions, and perilla on top, pour hot broth, and enjoy.
