Overview:
Nam O fish sauce craft village was formed and developed hundreds of years ago. This is the source of the pure, delicious fish sauce typical of Da Nang. Traveling to “the most livable city" is not to be missed this destination with extremely new experiences about the nation’s traditional culture.
Location:
Nam O fish sauce craft village in Da Nang is located in the south of the city, about 3km from the Hai Van pass area. From the city center, you can move along Le Duan street, going towards Hai Van pass. Then continue to move to Lien Chieu district, Hoa Hiep ward, you can come to this fish sauce craft village.
Special process to make traditional fish sauce :
Step 1: Marinate the fish
The main ingredient to make the fish sauce is anchovies. This fish is caught a lot around the 3rd lunar month.
According to the experience of local people, do not wash the fish with fresh water to get the best taste. Besides, the salt chosen to marinate fish must be Ca Na salt, each grain is white and old. Salt is not contaminated with rainwater.
Step 2: Incubate the fish
After putting each layer of salted fish evenly, people will put it in crockery jars and place it in a dry and airy place. The body of the jar will be marked with the incubation date to ensure the correct incubation time.
Step 3: Filter fish sauce
The batches of fish will be incubated for a period of 1 year to 18 months. After that, most people use a manual method of filtering fish sauce, using a bamboo squeegee (similar to a funnel), then a clean cloth is lined up, and below is a basin to collect fish sauce.
Step 4: Incubate fish sauce
After filtering the fish sauce, people do not bottle it immediately but continue to brew it in crockery jars, using a cloth to cover it. This step helps the final product to have a more delicious, milder taste
