Hanoi’s Green Delicacy: A Journey into the World of Cốm
With its rainbow of tastes, customs, and ingredients, Vietnam is evidence of the complex link between cuisine and culture. Every meal tells a tale; every scent catches an emotion; every mouthful reminds one of something. Some dishes in this gastronomic tapestry become not only food but also time markers, honoring the abundance of nature and the seasonal changes.
One such trademark delicacy is the “green sticky rice," sometimes known as “Cốm." Harvested in the early days of fall, this verdant-hued rice is far more than simply food; it’s a seasonal celebration, a symbol of Vietnam’s rich agricultural legacy, and a taste that brings nostalgia in every Vietnamese heart.
Story and History
Hanoi’s Com
Deeply ingrained in time and customs, the narrative of Cốm is as vivid and gripping as Vietnam itself. For decades, Cốm—which literally means “young rice"—has been very vital in Vietnamese cultural and gastronomic stories. Originating in the charming Vong village on the outskirts of Hanoi, this delicate rice variation has been linked with the rhythm and spirit of Vietnamese rural life.
Long before Cốm became a sought-after delicacy in busy metropolitan markets, it was closely entwined with Vietnamese mythology. Stories abound of farmers singing melodic tunes in the fields to call the rice plants to produce their best. Under the moonlight autumn sky, these same farmers would carefully choose the young, green rice grains to guarantee only the best.
The art of preparing Cốm itself is handed down over the years. Roasted and flattened, the green rice grains have that unique taste and chewy texture. The best Cốm, according to many, smells fresh like dew and has earthiness from the rice fields.
Moreover, Cốm is recognised for its symbolic meaning as much as for its taste. It announces the approach of autumn, the change from the hot summer to cooler, crisp days. Cốm is widely connected in Vietnamese folklore with youth, purity, and the ephemeral character of life, therefore reminding one of the transient beauty of every season. Cốm is essentially a bite-sized piece of history, a culinary heirloom, and an expression of Vietnamese customs and stories—not just green sticky rice.
Its Meaning
