Mi Quang: This is perhaps my favorite noodle dish from all of central Vietnam. Yellow noodles, colored by turmeric are served with just a little bit of very concentrated broth on it. Toppings will include shrimp and usually pork, with a good amount of fresh herbs, peanuts, and crispy rice crackers.
Banh Xeo: Translating to the sizzling cake, Banh Xeo is a crispy pancake from Vietnam made from a rice flour batter with water and turmeric. Common fillings include shrimp, pork, bean sprouts, and some chopped fresh mushrooms.
