Holding a sign reading “Namaste - Welcome to Vietnam,” as I stood at the arrival gate of Noi Bai Airport, I saw their eyes light up. It was that exhausted but curious feeling you get after a long flight the sort of feeling that tells you something magical is about to happen.
2:00 PM – Check-in at The Ann Hanoi Hotel (4-star)
We drove through the soft bustle of Hanoi, through narrow streets, past waving school children and those trademark rows of yellow colonial buildings. For example, we drew them in when we welcomed our guests at The Ann Hanoi Hotel with hot towels and herbal tea. The rooms were serene, with old rooftops and lotus plants on balconies, and perfect for that initial, natural reflecting moment.
6:30 PM – Dinner at Uu Dam Chay
That night, we ate at Uu Dam Chay, a vegetarian restaurant so much like a Zen temple. Lanterns flickered. The air was full of lemongrass and ginger. Dishes arrived like artwork mango salad, clay pot tofu, and lotus seed soup. It was more than a meal it was our first proper rendezvous with the spirit of Hanoi Tours: graceful, down-to-earth, and genuine.
After dinner, I proposed a stroll back through Ba Trieu Street, where the city hums quietly under golden lighting. But for most, it was time to come to rest. And quite rightly tomorrow we sail.

7:00 AM – Breakfast at the hotel
By dawn, the dining room buzzed with hushed activity. Our guests were served a light breakfast of fruits, rice noodles, and herbal teas and I ensured that the chefs prepared vegetarian food that matched the palate of Nepalese.
7:45 AM – Departure for Ha Long Bay via Expressway
We climbed onto our private bus and the scenery began to change. Plains turned into rolling hills, and soon enough the ocean sparkled in the distance.
10:30 AM – Arrive at Ha Long International Port & Embark Ambassador Day Cruise
Stepping aboard the Ambassador Day Cruise was like walking right into a postcard. The crew dipped their heads in greeting, and in minutes we were gliding through the emerald waters of Ha Long Bay a destination above all others in the world.
11:30 AM – Lunch Onboard (Vegetarian & Indian menu available)
We watched limestone cliffs and floating villages slip by over lunch, served in a glass-walled dining room. The warm lentil curry and stir-fried vegetables served with jasmine rice and tropical fruit were particularly popular with our Nepalese guests.
1:00 – 3:00 PM – Explore Surprise Cave & Titov Island
We entered Surprise Cave, a cavern so wide and bright that it felt like being in a cathedral sculpted by nature. Later we stopped at Titov Island, where a couple of enterprising guests trekked up to the viewpoint while others lounged by the shore. I recall one visitor whispering, “I never thought this place could exist.”
4:00 PM – Disembark & Return to Hanoi
As we drove back, the bus fell into a content silence eyes closed, cameras full.
7:00 PM – Dinner at Sadhu Vegetarian Restaurant
We dined that evening at Sadhu, a restaurant celebrating Vietnamese and Indian plant-based cuisine. The vibe was quiet, nearly meditative. All of our guests left smiling, and one said to me, “This feels like home.”

7:00 AM – Depart for Ninh Binh
As we drove south, the flatlands stretched wide under soft clouds. Water buffalo roamed. The rivers began to appear.
9:30 AM – Arrive at Bai Dinh Pagoda
Bai Dinh Pagoda is much more than a temple; it is a spiritual city. As we walked in the long corridor beneath 500 Arhat statues, the silence of stone and the ticking of time settled over us. I watched our guests come to a halt for a moment in the Great Buddha Hall, heads bowed. No words are needed.
12:00 PM – Lunch at a Peaceful Riverside Restaurant
We ate next to a riverbank, our tables set under bamboo roofs. The food crispy tofu, fresh herbs, and wild mushrooms were prepared simply, and beautifully.
1:30 PM – Boat Journey through Trang An
Then that bit of everyone’s been talking bout: Trang An. We boarded wooden rowboats, four to a boat. The local women silently rowed us through jade-green waters, ducking through gaps of caves, passing hidden temples. Some guests meditated. Others took photos with awe. I couldn’t have expected a better ending, as a guide.
4:30 PM – Return to Hanoi & Farewell
On our way back, I gave each guest a handwritten note and a small lotus-shaped lantern. “Thank you for trusting us to be a part of your journey,” I wrote. Because this was more than a tour. It was a shared story.
6:30 PM – Light dinner or airport drop-off depending on flight time
