Ingredients and Preparation
Essential Ingredients
The core ingredients of Bun Cha Ca in Danang include:
Fish: A common choice would be mackerel or barracuda, both being oily and thus offering a slightly chewy texture.
Noodles: The fine noodles of rice take very well to the broth.
Fish and vegetable head soup: Cooked using bone and fish heads, along with tomatoes, pineapples, and other aromatic vegetables in simmering water.
Vegetables: That would find their way into the cucusu occasionally include cabbage.
Herbs and Spices: Dill, green onion, and a light amount of turmeric for color and taste.
Prepare ingredients
Fish cakes: Fresh fish is minced after deboning, mixed with spices and dill, and sometimes a hint of pork fat for seasonings and texture. This mix is shaped into small cakes and either fried or steamed.
Cooking the stock: The fish bones and heads are simmered for hours until the liquid becomes cloudy, giving the foundation a rich, developed flavor. Tomatoes, pineapples, and some other vegetables are added in to make a balanced, slightly sweet broth.
Cooking the Noodles: Rice stick noodles are boiled and when just tender are run under cold water to stop the cooking.
To assemble the soup, noodles go in a bowl and fish cakes are mounted on top. Hot broth is poured into the bowl, and the fresh herbs and vegetables are added last minute so that they are able to stay crunchy.
